Lemon muffins with icing

=> Cupcakes and muffins have been very popular for many years. They are not complicated to make, and thanks to the icing and other decorations they are tempting to the eye. We have chosen a recipe for lemon muffins, because it is a light and refreshing dessert.

Ingredients:

  • 200g flour
  • 100g sugar
  • 2 eggs
  • 100 ml oil
  • 150 ml of natural yogurt
  • juice and zest of 1 lemon
  • 1 teaspoon baking powder
  • powdered sugar for icing

Preparation:

  1. In a bowl, mix flour, sugar and baking powder.
  2. In a separate bowl, combine the eggs, oil, yogurt, and lemon juice and zest.
  3. Add the dry ingredients to the wet ingredients and mix gently until well combined.
  4. Pour the batter into muffin tins and bake at 180°C for about 20 minutes until the muffins are golden.
  5. Once cooled, decorate the muffins with icing prepared by mixing powdered sugar with lemon juice.

Bajaderki

You can make this sweet snack really quickly, and you'll mainly need leftover cake and cookies. =>Bajaderka is the perfect dessert for supporters of the zero waste idea in the kitchen.

Ingredients:

  • 400 – 500 g leftover cake, cookies, biscuits
  • 200 g dried plums
  • 100 ml rum
  • 50g butter
  • 1 tablespoon cocoa
  • 4 tablespoons of sugar
  • ⅓ cup of milk
  • 1 tablespoon peanut butter
  • 75 g ground nuts

Preparation:

  1. Leftover cake and cookies transfer to a food processor to finely chop.
  2. Blend dried plums with rum and peanut butter.
  3. Boil the milk with the sugar, butter and cocoa. Then cool slightly, pour into the bowl with the crushed cookies and add the plum mixture. Mix everything well.
  4. Form balls from the mixture, then place in the refrigerator for about an hour to chill.
  5. Roll the finished bajaderki in ground nuts.

Fruit skewers with chocolate icing

This is a healthy and colorful snack that will surely disappear from your table quickly. Fresh fruit combined with chocolate icing create a delicious, delicate flavor composition.

Ingredients:

  • fresh fruit (e.g. strawberries, grapes, kiwi, bananas, peaches)
  • 100 g dark chocolate
  • 1 tablespoon coconut oil
  • skewer sticks

Preparation:

  1. Wash, peel and cut the fruit into pieces.
  2. Thread fruit onto skewer sticks to create colorful arrangements.
  3. Melt the chocolate with coconut oil in a water bath.
  4. Drizzle the finished skewers with chocolate and set aside for a while to allow the chocolate to harden.

Chocolate truffles

Truffles are an elegant dessert that looks beautiful on the table. Contrary to appearances, their preparation is extremely simple, so any amateur confectioner can handle it perfectly.

Ingredients:

  • 200 g dark chocolate
  • 100 ml heavy cream
  • 2 tablespoons butter
  • cocoa, coconut flakes, nuts for coating

Preparation:

  1. Break the chocolate into small pieces and place in a bowl.
  2. Heat the cream over medium heat until it begins to boil. Then remove from heat and add the butter. Pour the hot cream over the chocolate and stir until smooth.
  3. Set the mixture aside to cool. Then refrigerate for at least 2 hours to set.
  4. Form the hardened mass into small balls and roll in cocoa, coconut flakes or finely chopped nuts.
  5. Store finished truffles in the refrigerator.

Mini pancakes 

These are classic, fluffy American pancakes in a mini version. Pancakes are a healthier and more filling option for a sweet snack during a party. They are best served on a large platter accompanied by fresh fruit and whipped cream. They work well both warm and cold.

Ingredients:

  • 200g flour
  • 300 ml milk
  • 2 eggs
  • 50 g melted butter
  • 1 teaspoon baking powder
  • 30 g brown sugar
  • a pinch of salt
  • frying oil
  • optional: fruit, maple syrup, honey, powdered sugar, whipped cream

Preparation:

  1. Mix melted butter with milk, flour, sugar, eggs, baking powder and salt until smooth.
  2. Heat the pan. Spoon the batter onto the pan, drawing flat circles about 5-6 cm in diameter.
  3. Fry until bubbles begin to burst, then flip the pancake over.
  4. Serve with your favorite fruit, powdered sugar, maple syrup, honey or whipped cream.
