Macaroons with lemon cream
Ingredients:
- Macaroons:
- 150 g blanched almonds
- 150 g powdered sugar
- 100 g egg whites (approx. 3 egg whites)
- 30g sugar
- Lemon cream:
- 2 eggs
- 100g sugar
- Juice of 2 lemons
- 100g butter
Preparation:
- Macaroons:
- In the Thermomix, blend the almonds into a powder (20 sec / speed 10).
- Add powdered sugar and mix (10 sec / speed 6).
- Beat egg whites until stiff and add sugar. Continue beating until stiff peaks form.
- Gently mix the foam with the blended almonds.
- Form small round cakes on baking paper and leave them to dry for about 30 minutes.
- Bake at 150°C for 10-15 minutes.
- Lemon cream:
- Combine all the ingredients for the cream in the Thermomix and cook (10 min / 80°C / speed 3).
- Cool the cream and then fill the macarons with it.
Chocolate cake with white chocolate mousse
Ingredients:
- Cake:
- 200g dark chocolate
- 200g butter
- 4 eggs
- 200g sugar
- 150g flour
- 1 teaspoon baking powder
- White chocolate mousse:
- 200g white chocolate
- 400 ml heavy cream 36%
Preparation:

- Add butter and melt (5 min / 50°C / speed 2).
- Add eggs and sugar, mix (30 sec / speed 4).
- Add flour and baking powder, mix (20 sec / speed 4).
- Transfer the dough into the tin and bake at 180°C for 25-30 minutes.
- Mousse:
- Whip the cream in the Thermomix (until stiff peaks form, watch through the window to avoid overbeating).
- Melt the white chocolate in a bain-marie or in the Thermomix (5 min / 50°C / speed 2).
- Gently combine the whipped cream with the chocolate.
- Spread the mousse onto the cooled cake and chill in the refrigerator for at least 2 hours.
Cold mango cheesecake
Ingredients:
- 200 g butter cookies
- 100g butter, melted
- 500 g of cheese curd
- 200 g natural yogurt
- 200g mango puree
- 100g sugar
- 4 teaspoons of gelatin
- 200 ml heavy cream
Preparation:
- Bottom:
- Mix the cookies in the Thermomix (10 sec / speed 7).
- Add melted butter and mix (10 sec / speed 5).
- Transfer the cookie mixture to the pan, press it down and place in the refrigerator.
- Cheese mass:
- Soak the gelatin in 1/4 cup of cold water.
- Combine cottage cheese, yogurt, mango puree and sugar in the thermomix (1 min / speed 5).
- Heat the gelatin until it dissolves, add to the cheese mixture and mix (30 sec / speed 4).
- Whip the cream and mix gently into the cheese mixture.
- Transfer the cheese mixture to the cookie base and chill for at least 4 hours.
